Abstrak

Mixing machines are widely used by small and medium enterprises (SMEs) in the food industry to prepare dough for crackers, bread, and other products. The shaft of the mixing machine is subjected to cyclic loads during operation, which may lead to fatigue failure if not properly designed. This study analyzes the strength and fatigue life of the mixing shaft under different operational loads (10 kg, 15 kg, and 20 kg of dough). Experimental testing and analytical calculations were conducted to determine stress distribution, safety factor, and fatigue life cycles. Results show that higher operational loads significantly increase stress and reduce fatigue life. At 20 kg load, the shaft experienced maximum stress of 95 MPa and an estimated fatigue life of 1.2 × 10⁶ cycles, while at 10 kg load, stress was 60 MPa with fatigue life exceeding 2.5 × 10⁶ cycles. The findings suggest that operational load variation strongly influences shaft durability, and design optimization is required to ensure safe and efficient operation for SMEs.
