This study aims to develop a low-power thermal dehydration machine for preserving fruits and vegetables. The machine utilizes controlled heat and airflow to reduce moisture content while maintaining nutritional quality. The design process includes problem identification, conceptual design, prototype fabrication, and performance testing. Results show that the dehydration system effectively reduces moisture by 80–85% within 4 hours using only 200W of electrical power. The product retains color and texture quality suitable for small-scale food processing. This innovation represents an appropriate technology for micro and small enterprises in food preservation
